Salmon Polenta Muffins
I have a new addiction. It’s known as Pinterest. I’m usually not one to jump on the bandwagon right away when it comes to new trends. Case in point, it was only a few months ago that I broke down and finally learned what in the world StumbleUpon even was (it’s pretty nifty too, by the way). But after seeing at least 14 people mention Pinterest online in one day alone, I signed up myself and have never looked back.
Not that Pinterest and StumbleUpon have anything to do with polenta, but I feel like my relationship with polenta is a lot more like my StumbleUpon experience than my Pinterest introduction. I have friends that love polenta. And I grew up on cornbread and corn tortillas. But the beauty that is polenta wasn’t a part of my life until very recently.
And how was that even possible? Now I am in love. I’m hooked. Utterly addicted. Baked Polenta, Fried Polenta, Polenta Mash that’s practically drowning in butter.
And polenta in muffins. Did you catch that? In MUFFINS!
My favorite way to eat just about anything–in muffin form!
These Salmon Polenta Muffins are full of flavor and even manage to include hidden vegetables! Eat them warm right out of the oven or pack them for a picnic.
Salmon Polenta Muffins
Ingredients:
1 1/2 c. brown rice flour 1/2 c. polenta 2 tsp. baking powder 1/2 c. freshly grated Parmesan cheese 1/4 c. finely chopped parsley & chives 1 can (210g) salmon, drained 1 c. grated carrot 1/2 c. grapeseed oil 1 1/2 c. milk (I used rice milk) 3 eggsDirections:
Sift flour, cornmeal, & baking powder into medium sized bowl & add cheese, herbs, salmon, & carrot.
In another bowl, combine grapeseed oil, milk, and eggs and beat well.
Add wet ingredients to dry and stir to combine.
Spoon into greased muffin tray and bake for 20-25 minutes or until golden brown.

I really don’t use polenta a lot, but I ate a ratatouille at a restaurant once that was served over a bed of polenta-one of my favorite restaurant dishes of all time.
